I was wondering if both of the probes need to be connected and used at the same time for the couple's kit, or if the probes could be used separately so that we could each use the device independently.

The probes can be used separately. You do not need to have both probes plugged in at the same time. Just remember to only use the +/- keys on the side that the probe you are using is plugged into.
